New bakery opening on Montague Street – Kickstarter campaign for space renovations

L’Appartement 4F, a French baker and his wife baking at home in Cobble Hill currently and fulfilling online orders, plan to open a bakery at 115 Montague Street in the former Emack & Bolios ice cream space this fall. It will be a traditional Artisan French bakery, offering sourdough bread, croissants, pain au chocolat, almond croissants, pies and chocolate chip cookies, a much needed addition for the neighborhood after the closures of Pain Quotidien and Maison Kayser. The upstairs level will be a seating area and they will also use the sidewalk when it’s warm outside.

The baker Gautier moved from France to NYC in 2012. He met Ashley in 2016 and the two have been inseparable since. The only thing missing in his life was good bread. That is until he started baking. With a background in engineering, he perfected his recipes down to a science. The two reside in Cobble Hill Brooklyn with their dog Chip. When they aren’t baking, they visit local farmer’s markets, hike and drink wine.

The couple just launched a Kickstarter campaign to raise $50K for the renovations of the space, mainly to build out the kitchen. “Our dream is to build a French bakery on Montague Street and to help revitalize Brooklyn Heights. We would love to be a spot that serves fresh daily bread, coffee, pastries, sandwiches and eventually wine, cheese and charcuterie at night.” Donate here.
